I am trying to connect through serial (using TTL-232R-3V3-PCB serial-to-USB based on FTDI RS232 chip) to the Leopard Board 365 but the characters show in minicon are really ugly.
Here is an example when the board tries to connect to DHCP through Ethernet:
IP=Gonnig: Reopening networo devigew... Wending DHGP requewtw ...... ti}ed out!
I've tried to change any parameter such as baud rate, parity, etc. but it can be worse than here (115200 N81)

Are you using it inside a vm? I think that can sometimes be a problem. Also check your flow control settings.

OK there was a Voltage level problem...
Now (using the serial to DB-9 dongle) I am able to connect and see the boot messages correctly but Monte Vista is asking for my login username. What is it?
And it looks like when I'm entering something, nothing happens...
Oh it's fine right now... The settings in Windows Hyperterminal were incorrect: it should be 115200 8N1 with no parity.
